INGREDIENTS
15 cups sliced pickling cucumbers
3 onions thinly sliced
.25 cup coarse salt
4 cups ice
2.5 cups cider vinegar
2.5 cups sugar
.75 tsp turmeric
.5 tsp celery seed
1 tbsp mustard seeds
INSTRUCTIONS
Layer cucumbers, onions, salt, and ice in large colander set over a bowl. Put a weight on mixture and allow to stand 3 hours.
Rinse and drain thoroughly.
Combine remaining ingredients in large pot. Heat to just before boil, add cucumbers. Heat that mixture to just before boil. Seal in sterilized jars, 10 minutes in a hot water bath.
Easy way to sterilize clean jars is 10 minutes in 225 degree oven.
