3-4 Small rib bone-in roast (6-9 lbs)
1/4 c salt
3 tbsp fresh cracked pepper
3 clove thing sliced garlic
1. The night before poke wholes all over the roast with small knife, slide garlic slices into wholes. Liberally cover all sides of roast with salt and pepper. Put roast on a rack on a baking sheet and leave uncovered in fridge over night.
2. Take roast out of fridge to the counter to come up to room temp for up to 3 hrs. Preheat oven to 450. When ready to put roast into oven drop temp to 270. Roast for 20-26 mins per lbs. Internal temp should be 130-135. When done rest on counter for min. of 25 mins.
