Southwest Egg-rolls

chicken cooked and diced
red pepper diced small
cilantro steams diced
green onion diced
corn
black beans
frozen chopped spinach, thawed and drained very well
chili in adobo
cumin seeds
1/2 pepper jack cheese grated
1/2 Monterrey jock cheese grated
mayo just enough to combine
small tortillas
Mix and fill into tortillas. Coat egg-rolls in oil before placing on baking sheet. Bake at 400 until brown about 25-30 mins.
