Blue Cheese Coleslaw

1.5 cups shredded cabbage (1 bag HEB pre-shredded)

.5 cup pre-shredded carrot

.5 cup mayonnaise, greek yogurt, or a combination

1/4 cup apple cider vinegar

1 teaspoon celery seed

Pinch of sugar

Salt and pepper

1/3 cup blue cheese


1) Mix vinegar, celery seed, mayo/yogurt, and s&p, in bottom of large bowl. Let stand while you do something else (3 mins ish).

2) Add cabbage, carrots, and mix. If not serving immediately reserve in frig. for up to 1 hour.

3) Fold in or top with blue cheese right before serving.
