Jerk Chicken

INGREDIENTS
4 scallions
2 scotch bonnets or 1 serrano
4 garlic cloves
1 inch of ginger
1/4 cup fresh thyme
3 tbsp light brown sugar
2 limes juice and zest
Splash of soy sauce and cider vinegar
3/4 tbsp cinnamon
1 tbsp all spice
3 lbs chicken tights
INSTRUCTIONS
All ingredients except chicken in food processor. Pour sauce over chicken in Ziploc bag. Marinate 2 hrs to over night.
Drizzle with olive oil salt and grill. Good with grilled fruit or thinned out jam.
Sauce keeps for a month in the fridge. Also good on whole chicken, sword fish, & pork.
