Marinated Korean Cucumbers

1 cucumber (English, Persian, Pickling are all good) about 1.5 cups sliced

1 tbs soy sauce

2 tbs rice vinegar

1 tbs sugar

1 tsp Korean red chili power ( or 1/2 tsp smoked paprika & 1/2 tsp cayenne)

2 green onions, sliced

1 tsp sesame seeds

  1. Slice cucumbers into thin slices.

  2. Mix soy cause, vinegar, sugar, and spices in a bowl. Add cucumbers.

  3. Garnish with onions and seeds.

  4. Serve immediately or let sit in the frig for the cucumbers to absorb the dressing.
