Ingredients
1 (16 ounce) can no-salt-added black beans, drained, rinsed, and patted dry
1 red, orange, or yellow bell peppers, cut into large pieces
1/2 cup chopped fine cooked mushrooms
1/2 cup cooked lentils
1/4 cup corn
1 onions, cut into large pieces
3 garlic cloves, peeled
1 egg (more eggs if not enough to hold together)
Bunch of cilantro chopped including steams
1.5 tsp chili powder
1 tsp cumin
1 tsp cumin seeds
1 tsp smoked sweet paprika
Cayenne or chipotle in adobe to taste
1 tsp salt & pepper
1⁄2 – ¾ cup breadcrumbs, flour, oatmeal (ground), or almond flour
Directions
1. Reserve ¼ of the black beans. Mash the rest.
2. Cook mushrooms, pepper, lentils, garlic, and onion. Add spices at the end of veggies cooking so they bloom. Cool to about room temp.
3. Scramble egg in a bowl.
4. Combine all ingredients: room temp veggies, scramble egg, flour, corn, cilantro, reserved beans, lentils, and mashed beans.
5. Form into patties.
6. Fry patties in oil on both sides.
7. Service with lettuce/cole slaw, pickles, and tomatoes.
